Instructions
- Clean the dried shiitake mushrooms by shaking them briefly in a bowl of water or wiping with a damp cloth.
- Fill a glass jar with cold water and add the dried shiitake mushrooms.
- Place a weight over the mushrooms to ensure they are completely submerged.
- Let it stand overnight in the refrigerator.
- Remove the shiitake mushrooms the next morning; your dashi is ready to use.
