  • 5 pieces dried shiitake mushrooms
  • 1 cup cold water

Instructions

  1. Clean the dried shiitake mushrooms by shaking them briefly in a bowl of water or wiping with a damp cloth.
  2. Fill a glass jar with cold water and add the dried shiitake mushrooms.
  3. Place a weight over the mushrooms to ensure they are completely submerged.
  4. Let it stand overnight in the refrigerator.
  5. Remove the shiitake mushrooms the next morning; your dashi is ready to use.
