Instructions
- Combine shiitake mushrooms, water, salt, and pepper in a saucepan and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Strain the mixture through a fine mesh sieve to separate the mushrooms from the broth.
- Mix in balsamic vinegar and return the liquid to the saucepan.
- Simmer for an additional 5 minutes to reduce the acidity of the vinegar.
- Adjust salt to taste and use as a substitute for soy sauce.
