Ingredients

  • 2 oz Dried shiitake mushrooms
  • 3 cups Water
  • ½ tsp Salt
  • ¼ tsp Black pepper (ground)
  • 1 tbsp Balsamic vinegar

Instructions

  1. Combine shiitake mushrooms, water, salt, and pepper in a saucepan and bring to a boil.
  2. Reduce heat and simmer for 30 minutes.
  3. Strain the mixture through a fine mesh sieve to separate the mushrooms from the broth.
  4. Mix in balsamic vinegar and return the liquid to the saucepan.
  5. Simmer for an additional 5 minutes to reduce the acidity of the vinegar.
  6. Adjust salt to taste and use as a substitute for soy sauce.
