Shiitake Mushrooms

Ingredients

The mushrooms

  • 1 lb Shiitake mushrooms (whole)

The sauce

  • 3 tbsp Coconut aminos (or low-sodium soy sauce)
  • 1 tsp Toasted sesame oil
  • ¼ tsp Sea salt (to taste)
  • ¼ tsp Black pepper

The aromatics

  • 2 cloves Garlic (minced)

The garnish (optional)

  • 1 medium Green onion (sliced)
  • 1 tsp Sesame seeds

The cooking fat

  • 2 tbsp Olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat until shimmering.
  2. Add shiitake mushrooms and sauté for 7-10 minutes until softened and browned.
  3. Reduce heat to medium-low, push mushrooms to the side, and add garlic.
  4. Sauté garlic until fragrant, then mix it with the mushrooms.
  5. Add coconut aminos and scrape the bottom of the pan, simmering until the liquid absorbs.
  6. Remove from heat, stir in toasted sesame oil, and season with salt and pepper.
  7. Garnish with sesame seeds and green onions if desired.
