Sticky Sesame Shiitake Mushrooms

Instructions
- Reconstitute the dried shiitake mushrooms by soaking them in hot water for 5 to 20 minutes until plump.
- Dry the mushrooms with paper towels and slice them into thick slices, then coat them in cornstarch.
- Heat sesame oil in a pan over medium-high heat and fry the mushrooms until crisp on both sides, about 3 to 5 minutes.
- Remove the mushrooms from the pan and prepare the sauce in the same pan by adding all sauce ingredients and whisking until thickened, about 2 to 3 minutes.
- Return the mushrooms to the pan, toss to coat with the sauce, and cook until the sauce is thick and sticky, about 2 to 3 more minutes.
- Remove from heat and let cool slightly before serving.
