Sticky Sesame Shiitake Mushrooms

Ingredients

The mushrooms

  • 1 cup dried shiitake mushrooms
  • 2 tablespoons cornstarch
  • 1 tablespoon sesame oil

The sauce

  • 1-2 tablespoons maple syrup
  • 2 tablespoons liquid aminos
  • ½ teaspoon sesame seeds
  • ¼ teaspoon ground black pepper
  • ½ teaspoon ground ginger
  • ½ teaspoon cornstarch
  • ½ teaspoon water

For garnish

  • to taste chopped scallions
  • to taste sesame seeds

Instructions

  1. Reconstitute the dried shiitake mushrooms by soaking them in hot water for 5 to 20 minutes until plump.
  2. Dry the mushrooms with paper towels and slice them into thick slices, then coat them in cornstarch.
  3. Heat sesame oil in a pan over medium-high heat and fry the mushrooms until crisp on both sides, about 3 to 5 minutes.
  4. Remove the mushrooms from the pan and prepare the sauce in the same pan by adding all sauce ingredients and whisking until thickened, about 2 to 3 minutes.
  5. Return the mushrooms to the pan, toss to coat with the sauce, and cook until the sauce is thick and sticky, about 2 to 3 more minutes.
  6. Remove from heat and let cool slightly before serving.
