Ingredients

The mushrooms

  • 3 cups dried shiitake mushrooms

The glaze

  • cup reduced-sodium soy sauce
  • 1 Tbsp. raw or brown sugar
  • ½ tsp. toasted sesame seeds
  • Freshly ground black pepper

Instructions

  1. 1. Boil mushrooms, soy sauce, sugar, and water in a small saucepan.
  2. 2. Cover and reduce heat to medium-low, simmering until mushrooms are softened and liquid is absorbed, about 12–15 minutes.
  3. 3. Let mushrooms cool slightly, then thinly slice them.
  4. 4. Transfer sliced mushrooms to a bowl, add sesame seeds, and season with pepper.
