Sautéed Mushrooms

The mushrooms

baby bella (cremini) mushrooms or a mix of baby bella, shiitake, oyster, and/or other wild mushrooms
The cooking fats

extra virgin olive oil

unsalted butter
Seasonings

kosher salt

freshly ground black pepper

soy sauce (or tamari for gluten free)

balsamic vinegar plus additional to taste
Aromatics

chopped garlic (about 6 cloves)

chopped fresh thyme or 2 tablespoons chopped fresh parsley, plus additional for serving
Instructions
- Clean the mushrooms by wiping off any dirt and cut them into ½-inch thick slices.
- In a large skillet or Dutch oven, heat the olive oil over medium heat.
- Once the oil is hot, add the butter, mushrooms, salt, and pepper.
- Sauté the mushrooms, stirring occasionally, until they are tender and most of the liquid cooks away, about 8 to 10 minutes.
- Stir in the soy sauce and balsamic vinegar, then add the garlic and cook for an additional 30 seconds.
- Remove from heat and stir in the fresh herbs. Adjust seasoning as desired and serve hot.
