Sautéed Mushrooms

Ingredients

The mushrooms

  • 16 ounces mixed mushrooms, sliced or chopped

The seasoning

  • 2 tablespoons extra-virgin olive oil
  • heaping ¼ teaspoon sea salt
  • 1 tablespoon rice vinegar
  • 1 tablespoon tamari
  • 1 clove garlic, minced or grated
  • 1 tablespoon finely chopped fresh tarragon
  • to taste freshly ground black pepper

Instructions

  1. Heat the olive oil in a large cast-iron skillet over medium heat.
  2. Add the mushrooms, salt, and pepper, and toss to coat.
  3. Cook the mushrooms without stirring for 2 to 3 minutes to allow them to brown.
  4. Shake the pan and continue cooking, stirring occasionally, until the mushrooms are soft and well-browned, about 5 to 8 minutes.
  5. Lower the heat and stir in the rice vinegar, tamari, and garlic.
  6. Turn off the heat and sprinkle with fresh tarragon before serving hot.
