Sautéed Mushrooms

Instructions
- Heat the olive oil in a large cast-iron skillet over medium heat.
- Add the mushrooms, salt, and pepper, and toss to coat.
- Cook the mushrooms without stirring for 2 to 3 minutes to allow them to brown.
- Shake the pan and continue cooking, stirring occasionally, until the mushrooms are soft and well-browned, about 5 to 8 minutes.
- Lower the heat and stir in the rice vinegar, tamari, and garlic.
- Turn off the heat and sprinkle with fresh tarragon before serving hot.
