Ingredients

  • 4 cups water
  • 10 cm kombu kelp
  • 2 cups bonito flakes

Instructions

  1. Clean the kombu kelp with a damp cloth and place it in a container with the bonito flakes and water.
  2. Let the mixture stand overnight in the fridge.
  3. The next morning, strain the dashi into a large bowl using a sieve lined with a kitchen paper towel.
  4. Gently squeeze the dashi stock through the kitchen paper towel.
  5. Use the dashi for cooking or store it in the fridge.
