Instructions
- Clean the kombu kelp with a damp cloth and place it in a container with the bonito flakes and water.
- Let the mixture stand overnight in the fridge.
- The next morning, strain the dashi into a large bowl using a sieve lined with a kitchen paper towel.
- Gently squeeze the dashi stock through the kitchen paper towel.
- Use the dashi for cooking or store it in the fridge.
