Instructions
- Clean the kombu kelp with a damp cloth.
- For the Mizudashi method, fill a container with water and add the kelp. Let it steep overnight and remove the kelp the next morning.
- For the Nidashi method, steep the kelp in water for 30 minutes to 1 hour, then heat it over medium heat until small bubbles form. Turn off the heat and remove the kelp.
