Ingredients

  • 1 oz Kombu Kelp
  • 4 cups water

Instructions

  1. Clean the kombu kelp with a damp cloth.
  2. For the Mizudashi method, fill a container with water and add the kelp. Let it steep overnight and remove the kelp the next morning.
  3. For the Nidashi method, steep the kelp in water for 30 minutes to 1 hour, then heat it over medium heat until small bubbles form. Turn off the heat and remove the kelp.
