The main ingredients

  • 100 g Kombu Kelp
  • ¼ cup Soy sauce
  • 1 tbsp Mirin
  • 1 tbsp Sugar
  • ½ tbsp Sake
  • ½ tbsp Rice vinegar

Optional ingredients

  • to taste Red chili flakes
  • to taste Sesame seeds

Instructions

  1. Soak the dried kombu in water for 20-30 minutes until soft.
  2. Cut the softened kombu into small thin strips.
  3. In a saucepan, combine soy sauce, mirin, sake, and sugar, then bring to a gentle boil.
  4. Add the cut kombu pieces to the saucepan, reduce heat to low, and simmer for 20-30 minutes until tender.
  5. Optionally, add red chili flakes or sesame seeds for extra flavor.
  6. Allow to cool slightly before serving and store in an airtight container in the refrigerator.
