Instructions
- Soak the dried kombu in water for 20-30 minutes until soft.
- Cut the softened kombu into small thin strips.
- In a saucepan, combine soy sauce, mirin, sake, and sugar, then bring to a gentle boil.
- Add the cut kombu pieces to the saucepan, reduce heat to low, and simmer for 20-30 minutes until tender.
- Optionally, add red chili flakes or sesame seeds for extra flavor.
- Allow to cool slightly before serving and store in an airtight container in the refrigerator.
