Instructions
- Soak the soba noodles in water for 15 minutes.
- Boil 12 cups of water in a large pot.
- Prepare the dipping sauce by combining water and kombu kelp in a saucepan and bringing it to a boil.
- Add bonito flakes to the saucepan and turn off the heat.
- Remove the noodles from the soaking water and cook them in the boiling water for 3 minutes.
- Drain the cooked noodles and wash them under running water.
- Serve the noodles on a bamboo strainer topped with shredded nori seaweed and with mentsuyu and condiments on the side.
