Toshikoshi Soba

Ingredients

Soup

  • 480 ml dashi stock
  • 30 ml soy sauce
  • 30 ml mirin

Soba Noodle

  • 180 g dry soba noodle
  • 2.6 L water

Toppings

  • 2 tempura prawn
  • 4 slices kamaboko fish cakes
  • 1 tbsp finely chopped scallions
  • ΒΌ tsp Shichimi togarashi

Instructions

  1. Combine all soup ingredients in a saucepan and bring to a boil.
  2. Turn off the heat and set the soup aside.
  3. Boil water in a large pot and add the soba noodles, stirring with chopsticks.
  4. Cook the noodles for about 4 minutes.
  5. Drain the noodles and place them into two separate bowls.
  6. Top the noodles with tempura prawn, kamaboko fish cakes, and scallions.
  7. Pour the soup over the noodles and sprinkle with Shichimi togarashi if desired.
