Instructions
- Combine all soup ingredients in a saucepan and bring to a boil.
- Turn off the heat and set the soup aside.
- Boil water in a large pot and add the soba noodles, stirring with chopsticks.
- Cook the noodles for about 4 minutes.
- Drain the noodles and place them into two separate bowls.
- Top the noodles with tempura prawn, kamaboko fish cakes, and scallions.
- Pour the soup over the noodles and sprinkle with Shichimi togarashi if desired.
