Soba Noodle Soup

Ingredients

  • 2 oz Soba noodles
  • 4 pieces shrimp
  • 4 pieces raw scallops
  • 1 handful bean sprouts
  • 3 pieces asparagus, chopped
  • 4 pieces baby bok choy, halved
  • 1 piece green onion, sliced
  • 1 handful cilantro
  • 1 piece Thai pepper, thinly sliced
  • 1 tbsp miso
  • few drops sesame oil

Instructions

  1. Cook the Soba noodles in boiling water, then transfer to a bowl.
  2. Add shrimp to the boiling water for about 30 seconds, then transfer to the bowl with noodles.
  3. Discard the water and boil a fresh pot.
  4. Add raw scallops, bean sprouts, chopped asparagus, halved baby bok choy, sliced green onion, cilantro, and sliced Thai pepper to the bowl.
  5. Dilute miso in boiling water and pour it over the ingredients in the bowl.
  6. Add a few drops of sesame oil and enjoy the soup.
