Somen (Chilled Noodles)

Ingredients

The noodles

  • 90 g Dry somen noodles

The dipping sauce

  • ½ cup dashi stock
  • 1 tbsp soy sauce
  • 1 tbsp mirin

The toppings

  • 1 piece atsuyaki tamago
  • 2 pieces okura
  • 2 pieces radish
  • to taste bean sprouts
  • to taste mizuna leaves

The garnishes (yakumi)

  • 3 cm ginger, grated
  • 1 tbsp finely chopped negi shallots
  • optional wasabi

Instructions

  1. Make the dipping sauce by boiling water, adding dashi powder, soy sauce, and mirin, then cooling and refrigerating it.
  2. Prepare the toppings by slicing the atsuyaki tamago, okura, and radish, cutting bean sprouts, and washing the mizuna leaves.
  3. Grate the ginger and finely chop the negi shallots.
  4. Boil water in a large pot, add the somen noodles, and cook for 2 minutes.
  5. Drain the noodles, wash them under running water, and cool them down.
  6. Serve the noodles with ice cubes and top with the prepared toppings.
  7. Pour the dipping sauce over or serve it separately.
