Instructions
- Make the dipping sauce by boiling water, adding dashi powder, soy sauce, and mirin, then cooling and refrigerating it.
- Prepare the toppings by slicing the atsuyaki tamago, okura, and radish, cutting bean sprouts, and washing the mizuna leaves.
- Grate the ginger and finely chop the negi shallots.
- Boil water in a large pot, add the somen noodles, and cook for 2 minutes.
- Drain the noodles, wash them under running water, and cool them down.
- Serve the noodles with ice cubes and top with the prepared toppings.
- Pour the dipping sauce over or serve it separately.
