Lobster and Mushroom Somen

Ingredients

  • 2 pieces lobster claws
  • 1 bundle somen
  • 2 tablespoons Tsuyu or Soup Base
  • cups water
  • to taste butter
  • to taste oyster mushrooms
  • to taste green onion, cut into small rings

Instructions

  1. Boil the lobster claws in water for about 5 minutes until cooked.
  2. In a separate pot, boil the somen according to package instructions, usually for 4-5 minutes.
  3. Rinse the lobster with cold water, crack the shells, and remove the meat.
  4. Drain the noodles and place them in an ice water bath.
  5. Mix the tsuyu or soup base with 1½ cups of water.
  6. Brush the lobster meat with butter and grill for a couple of minutes.
  7. Brush the mushrooms with butter and grill for several minutes.
  8. Drain the cold noodles and place them in serving bowls.
  9. Pour the soup base into the bowls and top with lobster meat and grilled mushrooms.
  10. Garnish with chopped green onions and serve immediately.
