Pomelo Noodles

Ingredients

The noodles and edamame

  • 6 ounces dried somen or soba noodles
  • 8 ounces shelled edamame

The salad

  • 2 big handfuls salad or micro greens
  • scant ½ teaspoon toasted sesame oil
  • a few tablespoons ponzu sauce
  • cup chopped toasted peanuts
  • ½ medium pomelo, segments

Toppings

  • to taste garlic or chive flowers, or chopped chives

Instructions

  1. Boil water in a large pot and salt it well.
  2. Cook the noodles according to package instructions.
  3. Add the edamame to the pot when the noodles are nearly cooked.
  4. Drain the noodles and edamame, rinse with cold water, and shake off excess water.
  5. Transfer the noodles and edamame to a serving bowl with salad greens.
  6. Toss with toasted sesame oil and ponzu sauce, adjusting to taste.
  7. Top with chopped peanuts and pomelo segments.
  8. Garnish with garlic or chive flowers or chopped chives.
