Pomelo Noodles

The noodles and edamame

The salad

ponzu sauce

Instructions
- Boil water in a large pot and salt it well.
- Cook the noodles according to package instructions.
- Add the edamame to the pot when the noodles are nearly cooked.
- Drain the noodles and edamame, rinse with cold water, and shake off excess water.
- Transfer the noodles and edamame to a serving bowl with salad greens.
- Toss with toasted sesame oil and ponzu sauce, adjusting to taste.
- Top with chopped peanuts and pomelo segments.
- Garnish with garlic or chive flowers or chopped chives.
