The mushrooms
Instructions
- Soak the kombu strip in water for 30 minutes to 1 hour.
- Remove the stem of the enoki mushrooms and cut the rest in half.
- After soaking, take out the kombu strip and slice it thinly, keeping the soaking water.
- In a pot, combine the kombu soaking water, sliced kombu, soy sauce, mirin, and vinegar over medium heat.
- Once the mixture boils, add the enoki mushrooms, loosening them by hand.
- Cook the enoki mushrooms for a few minutes until softened and the broth thickens.
- Let it cool down and transfer to an airtight container.
