Homemade Nametake

Ingredients

The sauce

  • ΒΌ cup water
  • 1 small strip kombu kelp
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tsp rice vinegar

The mushrooms

  • 1 packet enoki mushrooms

Instructions

  1. Soak the kombu strip in water for 30 minutes to 1 hour.
  2. Remove the stem of the enoki mushrooms and cut the rest in half.
  3. After soaking, take out the kombu strip and slice it thinly, keeping the soaking water.
  4. In a pot, combine the kombu soaking water, sliced kombu, soy sauce, mirin, and vinegar over medium heat.
  5. Once the mixture boils, add the enoki mushrooms, loosening them by hand.
  6. Cook the enoki mushrooms for a few minutes until softened and the broth thickens.
  7. Let it cool down and transfer to an airtight container.
