Instructions
- 1. Combine mirin and sake in a medium pot and add kombu kelp to soak.
- 2. Heat the pot over medium heat, bring to a boil, then reduce to low and simmer for 5 minutes.
- 3. Add bonito flakes and simmer for an additional minute.
- 4. Turn off the heat and let the mixture cool.
- 5. Stir in the soy sauce.
- 6. Strain the mixture through a fine-mesh strainer lined with a paper towel into a clean container.
