Ingredients

  • 1 cup Mirin
  • ΒΌ cup Sake
  • 5 cm Kombu kelp strip
  • 20 g Bonito flake
  • 1 cup Soy sauce

Instructions

  1. 1. Combine mirin and sake in a medium pot and add kombu kelp to soak.
  2. 2. Heat the pot over medium heat, bring to a boil, then reduce to low and simmer for 5 minutes.
  3. 3. Add bonito flakes and simmer for an additional minute.
  4. 4. Turn off the heat and let the mixture cool.
  5. 5. Stir in the soy sauce.
  6. 6. Strain the mixture through a fine-mesh strainer lined with a paper towel into a clean container.
