Instructions
- Prepare the mackerel by cutting off the head and removing the guts.
- Blanch the mackerel fillets with boiling water until the flesh turns slightly white, then cool in ice water.
- In a saucepan, combine miso paste, sugar, sake, mirin, soy sauce, and ginger, and bring to a simmer.
- Add the mackerel fillets to the simmering sauce, cover, and cook for 10-15 minutes until cooked through.
- Serve the mackerel on a dish, spooning the sauce over it, and garnish with ginger and spring onion.
