Ingredients

The fish

  • 250 g Mackerel fillet

The miso sauce

  • tbs miso paste
  • tbs sugar
  • tbs mirin
  • ½ tbs soy sauce
  • cup water
  • ¼ cup sake
  • 10 g ginger

Garnishes

  • to taste sliced ginger
  • to taste finely chopped spring onion

Instructions

  1. Prepare the mackerel by cutting off the head and removing the guts.
  2. Blanch the mackerel fillets with boiling water until the flesh turns slightly white, then cool in ice water.
  3. In a saucepan, combine miso paste, sugar, sake, mirin, soy sauce, and ginger, and bring to a simmer.
  4. Add the mackerel fillets to the simmering sauce, cover, and cook for 10-15 minutes until cooked through.
  5. Serve the mackerel on a dish, spooning the sauce over it, and garnish with ginger and spring onion.
