Instructions
- Heat sake and mirin in a saucepan until boiling.
- Stir in miso paste until dissolved.
- Add half of the sweetener and stir, then add the remaining sweetener and stir until dissolved.
- Pat the fish dry and add the marinade, covering it and refrigerating for at least 1 day.
- Preheat the oven to 400 degrees.
- Melt butter in a skillet over medium-high heat.
- Sear the marinated fish skin side up for 2-3 minutes until browned, then flip it.
- Transfer the fish to the oven and bake for 6-9 minutes.
- Check the fish for doneness and cool before serving.
