Ingredients

The marinade

  • ¼ cup sake
  • ¼ cup white miso paste
  • ¼ cup mirin
  • 2-3 tablespoons sweetener or sugar

The fish

  • 14-16 oz black cod/sablefish

The cooking fat

  • 1 tablespoon unsalted butter

Instructions

  1. Heat sake and mirin in a saucepan until boiling.
  2. Stir in miso paste until dissolved.
  3. Add half of the sweetener and stir, then add the remaining sweetener and stir until dissolved.
  4. Pat the fish dry and add the marinade, covering it and refrigerating for at least 1 day.
  5. Preheat the oven to 400 degrees.
  6. Melt butter in a skillet over medium-high heat.
  7. Sear the marinated fish skin side up for 2-3 minutes until browned, then flip it.
  8. Transfer the fish to the oven and bake for 6-9 minutes.
  9. Check the fish for doneness and cool before serving.
