Ingredients

The fish

  • 1 lb Black Cod

The marinade

  • 3 tablespoons mirin
  • 3 tablespoons sake
  • cup white miso paste
  • cup sugar

Optional Miso Aioli

  • 2 tablespoons marinade
  • 2 tablespoons mayo
  • ¼ teaspoon rice wine vinegar

Optional Quick Pickled Daikon

  • ½ cup rice vinegar
  • ½ cup water
  • cup sugar
  • 1 cup peeled sliced daikon radish
  • 1 teaspoon kosher salt

Optional Sake Braised Kale

  • ¼ cup sliced onion
  • 2–3 cups shredded kale
  • 1 tablespoon oil
  • splash sake
  • to taste salt and pepper

Instructions

  1. Prepare the marinade by heating mirin and sake, then whisk in miso and sugar until smooth.
  2. Cool the marinade, reserving some for the aioli, and coat the fish in it. Refrigerate for 1-3 days.
  3. Preheat the oven to 400°F.
  4. Sear the fish in a skillet until golden, then bake in the oven for 8-10 minutes until flaky.
  5. Serve with rice and a vegetable side, optionally adding miso aioli and pickled daikon.
