Instructions
- Preheat the broiler.
- Rinse and pat dry the cod fillets.
- Mix miso, mirin, sake, sesame oil, red pepper flakes, and brown sugar to create the glaze.
- Brush about 1 tablespoon of the glaze on each fish fillet and marinate for at least 30 minutes.
- Broil the fish for 3-4 minutes until the glaze caramelizes.
- Remove from the oven, brush with remaining glaze, lower the oven to 350 degrees, and cook for another 5-6 minutes.
- Cook the Somen noodles for 2 minutes, then drain and rinse in cold water.
- In a hot pan, add sesame oil and vegetable oil, then sauté garlic, ginger, and red pepper flakes for 1 minute.
- Add all vegetables and stir-fry for 2-3 minutes until cooked to desired doneness.
- Add the noodles and soy sauce, tossing to mix everything together.
- Plate the cod with a side of noodles and vegetables, garnishing with reserved scallions.
