Miso Glazed Cod with Veggie Stir-fried Somen Noodles

Ingredients

The cod

  • 12 ounces cod fillets
  • 1 tablespoon miso paste
  • 1 tablespoon mirin
  • tablespoons sake
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 1 pinch red pepper flakes

The stir fry noodles

  • 4 ounces Hemisfares Somen noodles
  • 1 tablespoon sesame oil
  • 1 teaspoon vegetable oil
  • 1 bunch scallions
  • 1 tablespoon garlic
  • 1 tablespoon ginger
  • 1 pinch red pepper flakes
  • ¼ cup sweet bell peppers
  • 1 cup shiitake mushrooms
  • 1 cup broccoli florets
  • 2 cups bok choy
  • 1-2 tablespoons Hemisfares soy sauce

Instructions

  1. Preheat the broiler.
  2. Rinse and pat dry the cod fillets.
  3. Mix miso, mirin, sake, sesame oil, red pepper flakes, and brown sugar to create the glaze.
  4. Brush about 1 tablespoon of the glaze on each fish fillet and marinate for at least 30 minutes.
  5. Broil the fish for 3-4 minutes until the glaze caramelizes.
  6. Remove from the oven, brush with remaining glaze, lower the oven to 350 degrees, and cook for another 5-6 minutes.
  7. Cook the Somen noodles for 2 minutes, then drain and rinse in cold water.
  8. In a hot pan, add sesame oil and vegetable oil, then sauté garlic, ginger, and red pepper flakes for 1 minute.
  9. Add all vegetables and stir-fry for 2-3 minutes until cooked to desired doneness.
  10. Add the noodles and soy sauce, tossing to mix everything together.
  11. Plate the cod with a side of noodles and vegetables, garnishing with reserved scallions.
