Miso Glazed Salmon

Ingredients

The salmon

  • 2 fillets Salmon
  • 1 tsp salt

The miso glaze

  • 3 tbsp miso (white or awase)
  • 3 tbsp sugar
  • 1 tbsp mirin
  • 1 tbsp sake
  • to taste sesame seeds
  • to taste chopped green shallots

Instructions

  1. Sprinkle salt over the salmon fillets and let sit covered for 15 minutes.
  2. Wipe excess moisture off the salmon with a paper towel.
  3. Mix miso, sugar, mirin, and sake together and pour into a ziplock bag.
  4. Add salmon fillets to the bag, seal it, and coat the salmon with the marinade.
  5. Marinate in the refrigerator for 7-8 hours or overnight.
  6. Remove excess marinade from the salmon with a paper towel.
  7. Place salmon on a baking sheet lined with foil or a special baking sheet.
  8. Grill or broil the salmon at 410°F (210°C) for 6 minutes on one side.
  9. Turn the salmon over and cook for another 6 minutes.
  10. Glaze the salmon with the miso marinade and cook for 1 more minute.
  11. Serve the glazed salmon over soba noodles or rice, and garnish with sesame seeds and green shallots.
