Instructions
- Sprinkle salt over the salmon fillets and let sit covered for 15 minutes.
- Wipe excess moisture off the salmon with a paper towel.
- Mix miso, sugar, mirin, and sake together and pour into a ziplock bag.
- Add salmon fillets to the bag, seal it, and coat the salmon with the marinade.
- Marinate in the refrigerator for 7-8 hours or overnight.
- Remove excess marinade from the salmon with a paper towel.
- Place salmon on a baking sheet lined with foil or a special baking sheet.
- Grill or broil the salmon at 410°F (210°C) for 6 minutes on one side.
- Turn the salmon over and cook for another 6 minutes.
- Glaze the salmon with the miso marinade and cook for 1 more minute.
- Serve the glazed salmon over soba noodles or rice, and garnish with sesame seeds and green shallots.
