Instructions
- Combine soy sauce and mirin in a saucepan and heat until boiling, then turn off the heat.
- Add the kombu kelp and bonito flakes to the hot mixture.
- Allow the mixture to cool, then add the citrus juice of your choice.
- Refrigerate the mixture overnight.
- Strain the ponzu sauce through a fine mesh strainer into a sterilized jar.
