Authentic Ponzu Sauce

Ingredients

  • ½ cup soy sauce
  • ¼ cup mirin
  • 2 inches kombu kelp strip
  • 0.2 oz bonito flakes
  • ½ cup citrus juice

Instructions

  1. Combine soy sauce and mirin in a saucepan and heat until boiling, then turn off the heat.
  2. Add the kombu kelp and bonito flakes to the hot mixture.
  3. Allow the mixture to cool, then add the citrus juice of your choice.
  4. Refrigerate the mixture overnight.
  5. Strain the ponzu sauce through a fine mesh strainer into a sterilized jar.
