Homemade Ponzu Sauce

Instructions
- Simmer mirin and sake in a small pan for a minute, then cool to room temperature.
- Combine citrus juice, soy sauce, vinegar, water, kombu, and mushrooms with the mirin-sake mixture in a jar or container.
- Steep the mixture overnight.
- Strain through a fine strainer or cheesecloth.
- Refrigerate for up to a couple of weeks.
