Homemade Ponzu Sauce

Ingredients

  • 1 tablespoon mirin
  • 2 tablespoons sake
  • 3 tablespoons freshly squeezed citrus juice
  • cup soy sauce
  • 2 tablespoons rice vinegar
  • 3 tablespoons filtered water
  • 1 (4-inch) piece kombu
  • 3 (1-inch) pieces dried mushroom (porcini or shiitake)

Instructions

  1. Simmer mirin and sake in a small pan for a minute, then cool to room temperature.
  2. Combine citrus juice, soy sauce, vinegar, water, kombu, and mushrooms with the mirin-sake mixture in a jar or container.
  3. Steep the mixture overnight.
  4. Strain through a fine strainer or cheesecloth.
  5. Refrigerate for up to a couple of weeks.
