Ingredients

Dashi Stock

  • 500 ml water
  • 20 g Bonito Flake

Egg Drop Soup

  • 1 tsp usukuchi soy sauce
  • 1 tsp katakuriko
  • 2 tsp water
  • 2 pcs eggs
  • 1 tbsp chopped scallions

Instructions

  1. Prepare the dashi stock by heating water and adding bonito flakes just before it boils.
  2. Let the bonito flakes steep in the water for a few minutes and then strain the liquid.
  3. In a saucepan, bring the dashi stock to a simmer and add soy sauce.
  4. Mix katakuriko with water and add it to the saucepan, stirring well.
  5. Beat the eggs in a bowl and gently pour them into the soup while counting to 5, then stir gently.
  6. Turn off the heat and garnish with chopped scallions before serving.
