Instructions
- Prepare the dashi stock by heating water and adding bonito flakes just before it boils.
- Let the bonito flakes steep in the water for a few minutes and then strain the liquid.
- In a saucepan, bring the dashi stock to a simmer and add soy sauce.
- Mix katakuriko with water and add it to the saucepan, stirring well.
- Beat the eggs in a bowl and gently pour them into the soup while counting to 5, then stir gently.
- Turn off the heat and garnish with chopped scallions before serving.
