Instructions
- Add water to a large pot and place it over medium heat.
- When small bubbles form at the bottom, turn off the heat and add the bonito flakes.
- Let the bonito flakes steep for a few minutes until they sink to the bottom.
- Strain the liquid through a fine-mesh strainer or cheesecloth into a bowl.
- Use the dashi immediately or store it in the refrigerator.
