Ingredients

  • 30 g Bonito Flakes (Kezuribushi)
  • 4 cups Water

Instructions

  1. Add water to a large pot and place it over medium heat.
  2. When small bubbles form at the bottom, turn off the heat and add the bonito flakes.
  3. Let the bonito flakes steep for a few minutes until they sink to the bottom.
  4. Strain the liquid through a fine-mesh strainer or cheesecloth into a bowl.
  5. Use the dashi immediately or store it in the refrigerator.
