Niboshi Dashi (Anchovy Stock)

Ingredients

  • 30 g Dried Infant anchovies/sardines
  • 4 cups Water

Instructions

  1. Remove the heads and entrails of the dried baby anchovies.
  2. Dry roast the prepared anchovies in a saucepan over low-medium heat for a few minutes without oil.
  3. Fill a container with cold water and add the dry roasted anchovies, letting it stand overnight.
  4. Strain the dashi into a large bowl using a sieve lined with kitchen paper towel.
  5. Alternatively, steep the anchovies in water for 30 minutes, then bring to a boil and simmer for 3-5 minutes, removing any scum.
  6. Strain the stock through a sieve lined with kitchen paper towel.
