Instructions
- Remove the heads and entrails of the dried baby anchovies.
- Dry roast the prepared anchovies in a saucepan over low-medium heat for a few minutes without oil.
- Fill a container with cold water and add the dry roasted anchovies, letting it stand overnight.
- Strain the dashi into a large bowl using a sieve lined with kitchen paper towel.
- Alternatively, steep the anchovies in water for 30 minutes, then bring to a boil and simmer for 3-5 minutes, removing any scum.
- Strain the stock through a sieve lined with kitchen paper towel.
