Vegan Tempeh Gyros

Ingredients

The tempeh and marinade

  • 2 packages tempeh
  • 2 tablespoons lemon juice
  • 2 tablespoons liquid aminos
  • ¼ cup minced red onion
  • 3 cloves garlic
  • teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • ¼ teaspoon sea salt
  • 1 dash nutmeg
  • 1 spray oil mister or cooking spray

For serving

  • 4 pieces pita bread
  • to taste lettuce
  • to taste diced or sliced tomato
  • to taste thinly sliced red onion or quick-pickled onion
  • to taste vegan tzatziki sauce or tahini dressing

Instructions

  1. Steam the tempeh for 20 minutes.
  2. Whisk together the marinade ingredients in a large container.
  3. Slice the steamed tempeh into thin strips.
  4. Marinate the tempeh slices for 10 to 15 minutes.
  5. Preheat the oven to 475ºF and prepare a baking sheet with foil and oil.
  6. Arrange the marinated tempeh on the baking sheet and roast for 10 to 15 minutes.
  7. Serve the roasted tempeh in pita bread with your favorite toppings.
