Plant Based Jackfruit Gyros

fresh mint, thyme, or dill (roughly chopped)

The Potatoes

medium sized
potatoes (peeled and cut into ½ inch pieces)
The Toppings/Assembly

warmed pitas

vegan tzatziki or regular tzatziki

slices of tomato

pieces of fresh lettuce

vegan or regular feta crumbles

pickled onions
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- In a large bowl, mash the jackfruit with a fork until there are no large pieces.
- Add the remaining jackfruit ingredients to the bowl and mix well.
- Transfer the jackfruit mixture to a cast iron skillet and flatten it out.
- Bake in the oven for around 40 minutes, stirring halfway through.
- Prepare the potatoes in the same bowl used for the jackfruit.
- Bake the potatoes until crispy and golden, about 45 minutes.
- Warm the pitas in the oven.
- Assemble the gyros by spreading tzatziki on the pita, adding jackfruit, tomatoes, onions, lettuce, fries, and herbs.
- Wrap the pita and enjoy with a fresh Greek salad.
