Plant Based Jackfruit Gyros

Ingredients

The Jackfruit

  • 2 packages lightly seasoned jackfruit
  • ½ unit lemon (juice of half)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp thyme seasoning (dry)
  • 1 tbsp oregano seasoning (dry)
  • 3 cloves garlic (pressed)
  • small handful fresh mint, thyme, or dill (roughly chopped)
  • dash cumin
  • dash chili flakes

The Potatoes

  • 4 medium sized potatoes (peeled and cut into ½ inch pieces)

The Toppings/Assembly

  • 4 units warmed pitas
  • to taste vegan tzatziki or regular tzatziki
  • to taste slices of tomato
  • to taste pieces of fresh lettuce
  • to taste vegan or regular feta crumbles
  • to taste pickled onions

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, mash the jackfruit with a fork until there are no large pieces.
  3. Add the remaining jackfruit ingredients to the bowl and mix well.
  4. Transfer the jackfruit mixture to a cast iron skillet and flatten it out.
  5. Bake in the oven for around 40 minutes, stirring halfway through.
  6. Prepare the potatoes in the same bowl used for the jackfruit.
  7. Bake the potatoes until crispy and golden, about 45 minutes.
  8. Warm the pitas in the oven.
  9. Assemble the gyros by spreading tzatziki on the pita, adding jackfruit, tomatoes, onions, lettuce, fries, and herbs.
  10. Wrap the pita and enjoy with a fresh Greek salad.
