Ingredients

The jackfruit

  • 2 cans jackfruit, shredded
  • 1 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp oregano
  • 1 tsp smoked paprika
  • 1 tsp Diamond Crystal Kosher Salt
  • ½ tsp cracked pepper
  • ½ tsp chili flakes
  • Juice of 2 lemons lemon juice

The fries

  • 750 g premade or homemade fries
  • Juice from ¼ lemon lemon juice
  • ½-1 tsp Diamond Crystal Kosher Salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp dried oregano
  • 2 cups romaine lettuce, shredded
  • 2 small tomatoes, diced
  • 1 small red onion, diced
  • ¼ long English cucumber, cubed
  • cup Kalamata olives, sliced
  • cup feta cheese
  • 3 tbsp fresh parsley, chopped
  • 3 tbsp fresh cilantro, chopped
  • 3 tbsp fresh oregano, chopped
  • 1 serving Tzatziki

Instructions

  1. Combine jackfruit, olive oil, lemon juice, and spices in a large pot.
  2. Cook jackfruit over medium-high heat for 30-45 minutes until tender.
  3. Stir occasionally and add water as needed to achieve a pulled chicken consistency.
  4. Prepare fries and other ingredients while jackfruit cooks.
  5. Toss fries with olive oil, lemon juice, salt, garlic powder, onion powder, and oregano.
  6. Transfer fries to a serving dish.
  7. Top fries with jackfruit and other prepared toppings.
  8. Serve immediately with tzatziki.
