Ingredients

Tzatziki

  • 1 cup plain full fat yogurt
  • ½ zucchini grated
  • ½ cup fresh parsley
  • 1 clove garlic
  • a few pinches fresh dill
  • to taste salt
  • to taste lemon juice

Marinated Tomatoes and Chickpeas

  • 1 can chickpeas
  • 4–6 tomatoes diced
  • 2 tablespoons olive oil
  • 1 clove garlic
  • to taste fresh parsley
  • to taste salt
  • to taste lemon juice

Other Ingredients

  • 1 bag sweet potato fries
  • 1 head romaine lettuce
  • to taste pita bread
  • to taste oil for frying
  • to taste feta cheese
  • to taste pepperoncini

Instructions

  1. Combine the tzatziki ingredients and adjust to taste.
  2. Mix chickpeas and tomatoes with olive oil, garlic, lemon juice, and parsley to marinate.
  3. Bake sweet potato fries according to package directions while preparing other ingredients.
  4. Cut pita bread into strips and fry until golden brown and crispy, then drain and salt.
  5. Assemble the fries by layering sweet potato fries, tzatziki, marinated tomatoes and chickpeas, fried pita, romaine, and feta cheese.
