Middle Eastern Spiced Chickpea Fries

Ingredients

The batter

  • 4 cups water
  • 1 tablespoon kosher salt
  • 2 cups chickpea flour
  • 1 tablespoon sumac

The frying

  • 2 cups vegetable oil
  • to taste aleppo pepper for dusting

For dipping

  • to taste green and red harissa

Instructions

  1. Bring water and salt to a boil in a large pot.
  2. Whisk in chickpea flour and sumac, stirring until the mixture thickens.
  3. Remove from heat and spread the batter onto a parchment-lined baking sheet in a ½-inch thick layer.
  4. Let it firm up for 30 minutes.
  5. Cut the mixture into rectangular pieces.
  6. Heat vegetable oil in a deep skillet over medium-high heat.
  7. Fry the pieces in batches until golden brown and crispy, about 3-4 minutes per batch.
  8. Remove and drain on paper towels, then sprinkle with aleppo pepper and serve with harissa.
