Classic Sweet Potato Casserole

Instructions
- Boil the sweet potatoes for 40 minutes until soft, then drain and cool.
- Peel the sweet potatoes and purée them in a food processor or blender.
- Preheat the oven to 350°F and butter a 9x13-inch baking dish.
- In a large bowl, combine the sweet potato purée with orange zest, orange juice, brandy, brown sugar, butter, egg yolks, ginger, and season with salt and pepper.
- Spread the mixture into the prepared baking dish.
- Melt butter in a skillet and mix with brown sugar, pecans, and cinnamon for the topping.
- Spread the topping over the sweet potato mixture and bake uncovered for 40-45 minutes until caramelized.
