Grilled Pineapple Black Bean Salsa

Ingredients

  • 1 whole pineapple, sliced into large pieces for grilling
  • 1 can (8 oz) black beans, rinsed and drained
  • 2 whole limes
  • 1 whole jalapeno
  • ¼ cup chopped cilantro
  • 3 tbsp chopped red onions
  • 3 tbsp chopped unsweetened coconut
  • 1 tbsp lime zest
  • to taste sea salt

Instructions

  1. Prepare the grill for direct cooking at medium heat (350°F) and coat the grates with canola oil.
  2. Slice the limes in half and place the pineapple slices, limes (cut side down), and jalapeno on the grill.
  3. Grill for about 4-6 minutes until char marks form on both sides.
  4. In a mixing bowl, combine black beans, onion, cilantro, and coconut.
  5. Once cooled, chop the grilled pineapple and jalapeno, then add them to the mixing bowl.
  6. Squeeze the juice of the grilled lime into the mixture and stir well.
  7. Add the lime zest and refrigerate the salsa for at least an hour to meld the flavors.
  8. Serve with the second lime, garnished with grill marks.
