Grilled Pineapple Black Bean Salsa

black beans, rinsed and drained

Instructions
- Prepare the grill for direct cooking at medium heat (350°F) and coat the grates with canola oil.
- Slice the limes in half and place the pineapple slices, limes (cut side down), and jalapeno on the grill.
- Grill for about 4-6 minutes until char marks form on both sides.
- In a mixing bowl, combine black beans, onion, cilantro, and coconut.
- Once cooled, chop the grilled pineapple and jalapeno, then add them to the mixing bowl.
- Squeeze the juice of the grilled lime into the mixture and stir well.
- Add the lime zest and refrigerate the salsa for at least an hour to meld the flavors.
- Serve with the second lime, garnished with grill marks.
