Vegan Pumpkin Spice Latte

Instructions
- Combine all syrup ingredients in a medium saucepan and heat over medium-high until boiling.
- Reduce heat and simmer for 10 minutes, then remove from heat and let sit for 10 minutes.
- Strain the syrup using a nut milk bag or cheesecloth and store in an airtight container in the fridge.
- To make the latte, froth the almond milk and pour the espresso into a serving mug.
- Stir in the pumpkin spice syrup to taste, then pour the frothed milk into the mug, holding back the foam.
- Spoon the foam over the latte and sprinkle with cinnamon if desired.
