Green Seasoning Baked Cod

Instructions
- Preheat the oven to 300°F.
- Slice the onion and place it in a baking dish, then add the cod fillets on top.
- Season the cod with salt and pepper, then drizzle with olive oil and lime zest.
- Chop garlic and ginger, then combine them in a bowl.
- Chop thyme, cilantro, scallions, red bell pepper, and habanero, adding them to the bowl and mixing well.
- Spread the mixture over the cod, squeeze lime juice on top, and sprinkle with remaining salt and olive oil.
- Bake for 25–35 minutes until the fish is cooked through and the vegetables are softened.
