Green Seasoning Baked Cod

Ingredients

The fish and seasoning

  • ¼ each Vidalia or other sweet onion
  • 24 oz skinless, boneless cod fillets
  • tsp Diamond Crystal or ¾ tsp. Morton kosher salt, divided
  • ¼ cup extra-virgin olive oil
  • 1 each lime
  • 4 each garlic cloves
  • 1 2" piece ginger
  • 4–5 sprigs thyme
  • 1 small bunch cilantro
  • 2–4 each scallions
  • 1 each red bell pepper
  • 1 each habanero chile

For serving

  • to taste none cooked brown rice or ramen noodles

Instructions

  1. Preheat the oven to 300°F.
  2. Slice the onion and place it in a baking dish, then add the cod fillets on top.
  3. Season the cod with salt and pepper, then drizzle with olive oil and lime zest.
  4. Chop garlic and ginger, then combine them in a bowl.
  5. Chop thyme, cilantro, scallions, red bell pepper, and habanero, adding them to the bowl and mixing well.
  6. Spread the mixture over the cod, squeeze lime juice on top, and sprinkle with remaining salt and olive oil.
  7. Bake for 25–35 minutes until the fish is cooked through and the vegetables are softened.
