Ham and Cheese Hash Brown Quiche

The filling

Instructions
- Preheat the oven to 400°F and mist a 9-inch pie plate with cooking spray.
- In a large bowl, mix the shredded potatoes with melted butter, ½ teaspoon of salt, and ⅛ teaspoon of pepper.
- Press the potato mixture into the pie plate to form a crust and bake for 30 minutes.
- While the crust is baking, whisk together the eggs and milk in a bowl.
- Add the cheese, ham, scallions, and the remaining salt and pepper to the egg mixture, mixing well.
- Once the crust is done, pour the egg mixture into it, leaving a raised edge of crust.
- Reduce the oven temperature to 350°F and bake for an additional 30 minutes until the eggs are set and the crust edges are browned.
