Ingredients

The crust

  • 20 oz refrigerated shredded hash brown potatoes
  • 4 tablespoons light butter, melted
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper

The filling

  • 4 large eggs
  • ½ cup fat free milk
  • 4 oz shredded 50% reduced fat sharp Cheddar cheese
  • 5 oz diced deli ham
  • 1 scallion diced

Instructions

  1. Preheat the oven to 400°F and mist a 9-inch pie plate with cooking spray.
  2. In a large bowl, mix the shredded potatoes with melted butter, ½ teaspoon of salt, and ⅛ teaspoon of pepper.
  3. Press the potato mixture into the pie plate to form a crust and bake for 30 minutes.
  4. While the crust is baking, whisk together the eggs and milk in a bowl.
  5. Add the cheese, ham, scallions, and the remaining salt and pepper to the egg mixture, mixing well.
  6. Once the crust is done, pour the egg mixture into it, leaving a raised edge of crust.
  7. Reduce the oven temperature to 350°F and bake for an additional 30 minutes until the eggs are set and the crust edges are browned.
