Quiche with a Cheesy Potato Crust

Instructions
- Preheat the oven to 425°F and prepare a baking sheet with olive oil spray and layer with sliced potatoes, then season with salt.
- Bake the potatoes for 15 to 20 minutes until tender and slightly golden.
- In a bowl, whisk together the eggs and milk, then set aside.
- Lower the oven temperature to 375°F and grease a pie pan with olive oil spray.
- Layer the cooked potatoes in the pie pan, placing the more cooked pieces at the bottom.
- Add Swiss cheese slices on top of the potatoes, then pour the egg mixture over everything.
- Season with salt and pepper before baking for 25 to 30 minutes until set and golden.
- Let the quiche rest for a few minutes before slicing and serving.
