Quiche with a Cheesy Potato Crust

Ingredients

The crust

  • 1 pound Yukon gold potatoes (thinly sliced)
  • 1/2 teaspoon salt
  • olive oil spray

The filling

  • 5 large eggs
  • 1 1/2 cups milk
  • 3 slices Swiss cheese
  • salt & pepper

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with olive oil spray and layer with sliced potatoes, then season with salt.
  2. Bake the potatoes for 15 to 20 minutes until tender and slightly golden.
  3. In a bowl, whisk together the eggs and milk, then set aside.
  4. Lower the oven temperature to 375°F and grease a pie pan with olive oil spray.
  5. Layer the cooked potatoes in the pie pan, placing the more cooked pieces at the bottom.
  6. Add Swiss cheese slices on top of the potatoes, then pour the egg mixture over everything.
  7. Season with salt and pepper before baking for 25 to 30 minutes until set and golden.
  8. Let the quiche rest for a few minutes before slicing and serving.
