Ingredients

The crust

  • 1 whole Whole Wheat Pie Crust

The filling

  • 2 tablespoons extra virgin olive oil
  • 1 large sweet potato (or 2 small, about 1 pound)
  • ¾ teaspoon kosher salt
  • 1 large yellow onion
  • 4 large eggs
  • cup milk
  • ¼ teaspoon ground nutmeg
  • 4 ounces goat cheese
  • 1 tablespoon fresh rosemary

Instructions

  1. Prepare the pie dough and refrigerate it.
  2. Wash, peel, and cube the sweet potatoes, then toss with olive oil and salt before roasting.
  3. Sauté the sliced onions in olive oil until golden.
  4. Roll out the dough and fit it into a pie dish, then blind bake until golden.
  5. Layer the roasted sweet potatoes, caramelized onions, goat cheese, and rosemary in the crust.
  6. Whisk together the eggs, milk, nutmeg, and remaining salt, then pour over the filling.
  7. Bake the quiche until puffed and set, then let it rest before serving.
