Dairy Free Pizza Quiche

Instructions
- Preheat the oven to 375°F.
- Peel and thinly slice the sweet potatoes.
- Grease two dishes and arrange the sweet potato slices to form a crust.
- Season the crust with sea salt and pepper, then set aside.
- Sauté the diced onion and divide it between the two dishes.
- Add a handful of black olives and spinach to each dish.
- In a blender, puree the coconut milk and sundried tomatoes.
- Add the eggs, salt, garlic powder, and oregano to the blender and puree again until frothy.
- Pour the egg mixture evenly over the fillings in the dishes.
- Bake for 30 minutes or until just set in the middle.
- Let the quiches cool for 15 minutes before serving.
