Ingredients

The crust

  • 1 large or 2 small sweet potatoes

The filling

  • 8 pieces eggs
  • 1 can full-fat coconut milk
  • 1 medium onion, diced
  • 2 handfuls spinach
  • ¼ cup sundried tomatoes
  • to taste black olives
  • ½ tsp sea salt
  • a pinch sea salt for sweet potatoes
  • ¼ tsp garlic powder
  • ¼ tsp dried oregano

Instructions

  1. Preheat the oven to 375°F.
  2. Peel and thinly slice the sweet potatoes.
  3. Grease two dishes and arrange the sweet potato slices to form a crust.
  4. Season the crust with sea salt and pepper, then set aside.
  5. Sauté the diced onion and divide it between the two dishes.
  6. Add a handful of black olives and spinach to each dish.
  7. In a blender, puree the coconut milk and sundried tomatoes.
  8. Add the eggs, salt, garlic powder, and oregano to the blender and puree again until frothy.
  9. Pour the egg mixture evenly over the fillings in the dishes.
  10. Bake for 30 minutes or until just set in the middle.
  11. Let the quiches cool for 15 minutes before serving.
