Ingredients

The crust

  • 1 ½ cups gluten free all-purpose flour
  • ¾ teaspoon xanthan gum
  • ½ cup butter
  • 3 teaspoons sugar
  • ¾ teaspoon kosher salt
  • 6–8 tablespoons ice water

The filling

  • 5 large eggs
  • ¼ cup egg whites
  • ½ cup non-dairy milk
  • cup coconut milk
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 cup freshly shredded cheese
  • ½ to 1 cup chopped greens
  • 1 cup chopped mix-ins

Instructions

  1. Prepare the crust, either homemade or store-bought.
  2. For the homemade crust, combine flour, xanthan gum, and butter in a food processor.
  3. Add ice water and pulse until the mixture is crumbly.
  4. Shape the dough into a ball, flatten, wrap, and chill for at least an hour.
  5. Roll out the dough and transfer it to a pie dish.
  6. Parbake the crust until golden brown.
  7. Reduce oven temperature and prepare the filling by whisking eggs, milk, coconut cream, garlic powder, salt, and pepper.
  8. Layer greens and some cheese in the crust, then pour the egg mixture on top.
  9. Sprinkle remaining cheese and bake until the center is set.
  10. Allow to cool for 10 minutes before serving.
