Instructions
- Prepare the crust, either homemade or store-bought.
- For the homemade crust, combine flour, xanthan gum, and butter in a food processor.
- Add ice water and pulse until the mixture is crumbly.
- Shape the dough into a ball, flatten, wrap, and chill for at least an hour.
- Roll out the dough and transfer it to a pie dish.
- Parbake the crust until golden brown.
- Reduce oven temperature and prepare the filling by whisking eggs, milk, coconut cream, garlic powder, salt, and pepper.
- Layer greens and some cheese in the crust, then pour the egg mixture on top.
- Sprinkle remaining cheese and bake until the center is set.
- Allow to cool for 10 minutes before serving.
