Vegan Mango Coconut Yogurt

Instructions
- Shake the coconut milk can well and pour into a sterilized glass jar.
- Whisk the coconut milk until smooth and add the contents of the probiotic capsules, stirring with a wooden or plastic spoon.
- Cover the jar with cheesecloth and secure it with a rubber band.
- Let the mixture sit at room temperature for 24 to 48 hours until it thickens and becomes tangy.
- Once thickened, refrigerate the yogurt to further enhance its flavor and thickness.
- To prepare the mango purée, blend the mango cubes with orange juice until smooth.
- Add the desired amount of mango purée and vanilla to the yogurt, mixing well.
- Taste and adjust the flavor as needed, then refrigerate for an additional 4-6 hours before serving.
