Vegan Coconut Yogurt

Ingredients

The base

  • 1 can full-fat coconut milk
  • 2 capsules probiotic capsules (50 billion CFU)

Optional mix-ins

  • ¼ teaspoon vanilla extract
  • 15-20 grams unsweetened vegan protein powder or collagen
  • to taste sweeteners (maple syrup, agave, etc.)

Toppings

  • to taste fresh fruit
  • to taste granola
  • to taste orange or lemon zest
  • to taste toasted nuts

Instructions

  1. Whisk the coconut milk in a clean glass jar or bowl until smooth.
  2. Open the probiotic capsules and mix the powder into the coconut milk.
  3. Cover the jar loosely with cheesecloth or a breathable towel and let it ferment in a warm place for 24 to 48 hours.
  4. After fermentation, stir in any optional mix-ins if desired.
  5. Transfer the yogurt to the fridge to chill and thicken for a few hours.
  6. Serve with your choice of toppings.
