Instant Pot Coconut Milk Yogurt

Instructions
- Sterilize all equipment using boiling water or a dishwasher.
- In the Instant Pot, combine coconut milk and agar flakes, then bring to a boil using the Sauté function.
- Whisk to help dissolve the agar flakes as the mixture boils.
- Once boiling, turn off the Instant Pot and stir well to ensure all agar flakes are dissolved.
- Stir in the maple syrup and let the mixture cool to 110-115°F.
- Once cooled, add the probiotic powder and stir well.
- Press the Yogurt button on the Instant Pot and set the fermentation time for 18 to 24 hours.
- After fermentation, taste the yogurt for tartness; it may look watery.
- Pour the yogurt into a clean jar and refrigerate to set, where it will thicken.
