Ingredients

  • 2 cans full-fat coconut milk
  • 1 tablespoon agar agar flakes
  • 1 tablespoon maple syrup
  • 1 teaspoon probiotic powder

Instructions

  1. Sterilize all equipment using boiling water or a dishwasher.
  2. In the Instant Pot, combine coconut milk and agar flakes, then bring to a boil using the Sauté function.
  3. Whisk to help dissolve the agar flakes as the mixture boils.
  4. Once boiling, turn off the Instant Pot and stir well to ensure all agar flakes are dissolved.
  5. Stir in the maple syrup and let the mixture cool to 110-115°F.
  6. Once cooled, add the probiotic powder and stir well.
  7. Press the Yogurt button on the Instant Pot and set the fermentation time for 18 to 24 hours.
  8. After fermentation, taste the yogurt for tartness; it may look watery.
  9. Pour the yogurt into a clean jar and refrigerate to set, where it will thicken.
