Instructions
- Grate the zucchini, mix with salt, and let it sit in a colander to drain.
- Preheat the oven to 350°F and prepare a loaf pan with butter and parchment paper.
- In a medium bowl, whisk together all dry ingredients.
- Add eggs and melted butter to the dry ingredients and mix well.
- Squeeze the moisture from the zucchini and add it to the mixture along with walnuts if using.
- Mix the batter thoroughly with a hand mixer.
- Pour the batter into the prepared pan and level it out.
- Bake for 45-60 minutes, covering with foil halfway through to prevent burning.
- Check for doneness with a toothpick; it should come out clean.
- Let the bread cool in the pan for about 10 minutes before transferring to a rack to cool completely.
