Ingredients

Dry Ingredients

  • ¾ cup coconut flour
  • ½ cup low carb brown sugar
  • 3 tablespoons whey protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon salt

Zucchini

  • 5 oz medium zucchini, grated

Wet Ingredients

  • 6 large eggs
  • 4 oz salted butter, melted

Optional Ingredients

  • cup chopped walnuts

Instructions

  1. Grate the zucchini, mix with salt, and let it sit in a colander to drain.
  2. Preheat the oven to 350°F and prepare a loaf pan with butter and parchment paper.
  3. In a medium bowl, whisk together all dry ingredients.
  4. Add eggs and melted butter to the dry ingredients and mix well.
  5. Squeeze the moisture from the zucchini and add it to the mixture along with walnuts if using.
  6. Mix the batter thoroughly with a hand mixer.
  7. Pour the batter into the prepared pan and level it out.
  8. Bake for 45-60 minutes, covering with foil halfway through to prevent burning.
  9. Check for doneness with a toothpick; it should come out clean.
  10. Let the bread cool in the pan for about 10 minutes before transferring to a rack to cool completely.
