Instructions
- Grate the zucchini and mix it with salt, letting it sit to drain.
- Preheat the oven to 350°F and prepare a loaf pan with butter and parchment paper.
- Mix all dry ingredients in a bowl, then add eggs and melted butter.
- Squeeze excess moisture from the zucchini and add it to the mixture along with walnuts if using.
- Mix everything thoroughly and pour the batter into the prepared pan.
- Bake for 45-60 minutes, covering with foil halfway through to prevent burning.
- Check for doneness with a toothpick; it should come out clean.
- Cool in the pan for 10 minutes before removing and cooling completely on a rack.
