Ingredients

Dry Ingredients

  • ¾ cup coconut flour
  • ½ cup low carb brown sugar packed or erythritol
  • 3 tablespoons whey protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon salt

Zucchini

  • 5 oz medium zucchini, grated

Wet Ingredients

  • 6 large eggs
  • 4 oz salted butter, melted

Optional

  • cup chopped walnuts

Instructions

  1. Grate the zucchini and mix it with salt, letting it sit to drain.
  2. Preheat the oven to 350°F and prepare a loaf pan with butter and parchment paper.
  3. Mix all dry ingredients in a bowl, then add eggs and melted butter.
  4. Squeeze excess moisture from the zucchini and add it to the mixture along with walnuts if using.
  5. Mix everything thoroughly and pour the batter into the prepared pan.
  6. Bake for 45-60 minutes, covering with foil halfway through to prevent burning.
  7. Check for doneness with a toothpick; it should come out clean.
  8. Cool in the pan for 10 minutes before removing and cooling completely on a rack.
