Instructions
- Prepare the sesame ginger dressing or retrieve it from the fridge.
- Cook the sugar snap peas by blanching them in boiling water for 30 seconds or microwaving them for 45 to 60 seconds until tender-crisp.
- Chill the cooked sugar snap peas in an ice bath, then drain and chop each pod in half.
- In a large bowl, combine the salad greens and prepared vegetables, seasoning with salt and pepper.
- Drizzle the sesame ginger dressing over the salad and toss well, adjusting seasoning as needed.
- Garnish with pistachios and chopped chives before serving.
