Paleo Asian Chopped Salad

Ingredients

Dressing

  • ½ cup Sesame Ginger Dressing

Salad

  • 1 cup sugar snap peas, strings removed
  • 6 cups mixed salad greens (Romaine lettuce and baby arugula)
  • 2 medium Persian cucumbers, thinly sliced
  • 1 medium Hass avocado, peeled, seeded, and cubed
  • to taste Diamond Crystal kosher salt
  • to taste freshly ground black pepper
  • ¼ cup shelled dry-roasted and salted pistachios
  • 2 tablespoons minced chives

Instructions

  1. Prepare the sesame ginger dressing or retrieve it from the fridge.
  2. Cook the sugar snap peas by blanching them in boiling water for 30 seconds or microwaving them for 45 to 60 seconds until tender-crisp.
  3. Chill the cooked sugar snap peas in an ice bath, then drain and chop each pod in half.
  4. In a large bowl, combine the salad greens and prepared vegetables, seasoning with salt and pepper.
  5. Drizzle the sesame ginger dressing over the salad and toss well, adjusting seasoning as needed.
  6. Garnish with pistachios and chopped chives before serving.
