Paleo Asian Slaw

Ingredients

The slaw

  • ½ head Napa cabbage
  • 2 large carrots

The dressing

  • ¼ cup creamy roasted almond butter
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ume plum vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon lime juice
  • ¼ teaspoon fresh ginger, zested
  • 7 drops stevia
  • ¼ cup toasted sesame seeds

Instructions

  1. Chop the Napa cabbage and grate the carrots, then place them in a large bowl.
  2. In a separate bowl, mix the almond butter, vinegars, sesame oil, lime juice, ginger, and stevia until well combined.
  3. Stir in 2 tablespoons of sesame seeds into the dressing.
  4. Pour the dressing over the cabbage and carrots, mixing well to combine.
  5. Serve the slaw, garnished with the remaining sesame seeds.
