Easy Asian Slaw With Sesame Soy Dressing

Ingredients

Sesame Soy Dressing

  • 2 tbsp rice vinegar
  • ½ tbsp soy sauce
  • ½ tbsp mirin
  • 1 tbsp honey
  • ½ tsp grated ginger
  • ½ tbsp olive oil
  • ½ tbsp sesame oil
  • ½ tbsp sesame seeds

Asian Slaw

  • 50 g red cabbage
  • 50 g green cabbage
  • 50 g Napa cabbage
  • ½ piece carrot
  • 1 piece scallion
  • ¼ cup edamame (frozen, without pods)
  • to taste watercress (to garnish)
  • 2 tbsp fried noodle (to garnish)

Instructions

  1. Combine all ingredients for the sesame soy dressing and set aside.
  2. Finely shred the red cabbage, green cabbage, Napa cabbage, and carrot.
  3. Chop the scallion finely and set aside.
  4. Wash the shredded vegetables in a large mixing bowl under running water and drain.
  5. Use a salad spinner to remove excess water from the vegetables.
  6. Toss the vegetables into a serving dish.
  7. Scatter the edamame and garnish with watercress and fried noodle pieces.
  8. Dress with the sesame and soy dressing just before serving.
